We were grocery shopping the other day and berries were on sale! I looked at them and sang, "Haaaallelujah, Haaaalleluja, Hallelujah, Hallelujah (Do you know that song? I do)! So here's the deal, I only buy fruit that's on sale. Unless, of course, its bananas because they are so cheap already. So, during the cold, long, winter months here in the Midwest berries are far and few between and cost almost as much as my house. Seriously, they're expensive! During the spring/summer though, they are on sale and sometimes even local! So, I got some berries.
Later on, we were passing the bakery section... this section is torture for my Sweet because he wants all of the items here. There were pies... and he said, "Marm, I want a pie." Then, I responded with, "What kind of pie sweetie?" and he said, "Berry Pie!!!" And there you have it, he went and picked out the berries he wanted in his pie and I set off with the rest of our grocery shopping.
The next day I just so happened to have the day off of work so I made him a pie. The pie crust recipe I used is from Pioneer Woman's new cookbook (thanks Chan and Zach!)... the best part about it? I had never made a pie crust recipe that had me put the dough between two sheets of parchment paper and roll it out while in between the two. It made it sooooo much easier! I think I will use this trick every time I make pie, even if it's not part of the recipe!
For the filling, I looked at a few recipes and then came up with my own concoction. If you're in the mood for baking... and berries, try this! And then let me know what you think!

Pie Crust:
I used a pie crust recipe from Pioneer Woman- I love P-Dub!!!

* the recipe I actually used is from the newest Pioneer Woman cookbook... the link above has a little different recipe, but it is really close to the one I used.*
Filling:
2 cups strawberries
1 cup blueberries
1 cup raspberries
1 cup blackberries
1/3 cup sugar
3tbsp corn starch
zest of 1 lemon
juice of 1/2 lemon
1 tbsp unsalted butter cut into pieces
1. Preheat oven to 375
2. Make the pie crust according to link above
3. Mix the berries, sugar, cornstarch, lemon zest and juice together in a bowl. Pour the mixture into prepared pie crust.
4. Use the second half of the pie crust to roll out small strips and make a lattice pattern over the pie crust. * You could also just roll this out and use a whole crust over the top- just make sure you make slits so the berries can breathe while they cook!
5. Brush the tops with half and half, or egg whites, or milk... whatever you've got on hand!
6. Bake on a cookie sheet in the oven for 20 minutes.
7. Turn the oven down to 325 and bake for an additional 35ish minutes. If the edges start to get too done, just put some aluminum foil around it.
8. Let cool on a wire rack.
